I know wat you mean cos i personally experienced that before. Now i will impart this top secret knowledge i learnt from spongebob to you.
1. Set your servo to EPA 125 (Rudder)
2. In Rate (Gain below 40%) mode, made sure your tail blades are at zero degree.
3. Now check whether you have full movement on the rudder

Kira, did you buy your Esky HH gyro from RCE? if yes, i suggest you bring down your heli and let chong take a look.
If i'm not wrong the esky HH gyro does not have a reverse switch, you may have to mount it upside down, sideway etc. You need to tikum tikum.
