This is a 5 bladed helicopter without a fly bar and it looks so damn stable. Is it in a flybarless configuration? Meaning that it uses some electronics to mimic the effects of flybars?

a normal flybarred two bladed heli can be easily flown like that. moreover, its indoors.

I have flown a 4 bladed Trex HDE before, it is very stable with no wind condition but very un-predictable when there is cross wind. To make it fly like a fly-bar heli you will need electronic aid.
