higher or lower is better?
and what is aileron and rudder mix?

Travel Adjustment is to set your Servos to swing how much you need. It also depend on your plane how much throw they need so not necessary higher or lower will be better. It all depends.

For the mixing, you bascially need to mix some channels into a channel so that you control one of the channel and another will works together.
