          The usual problem I've observed for connector termination is insufficient thermal mass. If your tip is tiny and the wattage of the iron is low (for example, if you're using a 20-30W fixed power plugin iron with a 3mm cone tip), you're not going to get a satisfactory reflow without melting the connector.

          Get a iron with a chunky tip, and lots of power. I like my metcal MX-500, and for portable jobs, I like the Goot TQ77, or the iroda gas irons. The more heat and thermal mass you have, the less you heat up on the connector end before solder reflow temperatures are achieved.

          Also, keep your iron tips clean, tinned, and make sure the connector you're soldering to isn't filthy. Run the connector through a bit of sandpaper if you notice solder won't flow or the surface won't wet.
